Azienda Agricola Tempio: A Taste of Italy's Mozzarella Heritage


On October 20, 2023, we had the pleasure of visiting Azienda Agricola Tempio, a family-run cheesemaker nestled in the scenic Piedmont region of Italy.

Azienda Agricola Tempio makes mozzarella. The company's mozzarella is made from the milk of their own herd of water buffalo, which are raised on the company's farm. The mozzarella is made using traditional methods, and it is known for its fresh, creamy flavor.




Unveiling the Secrets of Buffalo Mozzarella: A Treat for the Senses


Because of its high butter fat content, buffalo milk is often used to make rich cheeses—mainly mozzarella.

The process of making mozzarella from buffalo milk is very similar to the process of making mozzarella from cow's milk. However, there are a few key differences.
  • Buffalo milk has a higher fat content than cow's milk. This gives mozzarella made from buffalo milk a richer, creamier flavor.
  • Buffalo milk has a slightly higher protein content than cow's milk. This gives mozzarella made from buffalo milk a firmer texture.
  • Buffalo milk is more acidic than cow's milk. This means that mozzarella made from buffalo milk will have a slightly tangier flavor.

Crafting Exquisite Cheeses from Farm to Table


Azienda Agricola Tempio produces a variety of cheeses, including Parmigiano-Reggiano, Grana Padano, and Gorgonzola. Their cheeses are available in a variety of sizes and shapes.  The cheeses are aged in the company's own cellars, which are located in a cool, humid environment.
